Protein spread
I always have cooked shredded chicken in the fridge, which guarantees me quality lean protein for any situation. I use it in salads, soups, waffles, omelets, and sometimes even eat it straight from a bowl.
This recipe is one of the latest I’ve created, and I never get tired of making it. It can be made on the spot or prepped ahead in larger quantities to store in the fridge. It’s a chicken spread made with a base of low-fat Greek yogurt and some seasonings that can vary depending on personal taste.
It’s flavorful, high in protein, and very filling!
Ingredients
150g shredded chicken
100g low-fat Greek yogurt (or skyr or quark)
A pinch of salt
A pinch of black pepper
A pinch of garlic powder
1 tsp yellow mustard
Preparation
Mix everything in a bowl and place in a tupperware. It can be eaten on its own, in a salad, or on bread. In the photo, I have a whole wheat English muffin with the spread and pickles as toppings – it was delicious!
