Protein waffles

These are probably the best waffles I've ever made! You already know I always have a secret (and protein-rich) ingredient up my sleeve, and this time I used low-fat cottage cheese. The texture is so fluffy and delicious that it's impossible not to want to make this recipe every day! Delicious and with the added bonus of being much more filling due to its protein content - 100g of low-fat cottage cheese contains about 14g of protein! If that's not reason enough to convince you to try this recipe, then I don't know what is!


Ingredients for 4 waffles


2 eggs

one cup of oat flour (or other flour of your choice) BUY HERE

2/3 cup of low-fat cottage cheese

a teaspoon of honey

a teaspoon of baking powder

2 tbsp of water (or more until you get a thick cake batter consistency)


Toppings


Sliced strawberries

A thread of honey

A pinch of cinnamon

One tablespoon of low-fat Greek yogurt (optional)


Preparation


1 - Preheat the waffle maker

2 - Mix all the ingredients in a bowl until smooth.

3 - Cook the waffles according to the machine's instructions.

4 - Remove from the machine and serve with your desired toppings.


Note: You can make the batter ahead of time and store it in the refrigerator for up to 3 days. You can freeze the waffles for up to 2 months.
